Gregorys Coffee Taps Pop’s Pizza Founders for Long Island Expansion

Gregorys Coffee, the New York City-born specialty coffee roaster, is expanding its Long Island footprint through a new franchise agreement with the operators of one of Manhattan’s neighborhood pizza favorites. The brand, which joined the Craveworthy Brands portfolio in 2025 and launched its franchise program earlier this year, has signed brothers Ricky and Nick Singh to open three locations on Long Island.
The Singh brothers are best known for running Pop’s Pizza NYC, an established name in one of Manhattan’s affluent neighborhoods. For the pair, the leap from slices to small-batch lattes was driven as much by a personal connection to the brand as by the business opportunity.
“Running our pizzerias taught us that it all comes down to the details and the people,” said Ricky Singh. “That never changed, no matter how busy we got. We fell for what Gregorys does – good coffee, good food and a real sense of community, and as New Yorkers, Long Island is exactly where we want to build that.”
Gregorys Coffee, founded in 2006 by Gregory Zamfotis and his family, has spent nearly two decades sharpening its model in one of the world’s most competitive coffee markets. With coffee roasted in its own NYC roastery and a guest experience built around daily ritual, the brand has cultivated a fiercely loyal following it calls “Gregulars.” Today, Gregorys operates more than 50 locations across the U.S.
Nick Singh noted that the brothers were fans long before they were operators. “We were Gregulars long before we were franchisees,” he said. “Gregorys was already part of our routine, so when the opportunity came up, it went beyond just business for us. What drew us in was a brand we already loved and the support behind it – we knew we wouldn’t be building this alone.”
That support structure sits within Craveworthy Brands, the multi-concept restaurant platform that counts more than 20 brands and over 300 locations nationwide. For the Singh brothers, the deal signals a natural evolution from one New York hospitality institution to another, backed by a platform designed to scale what the brand calls a culture-driven, community-oriented coffee experience.
